Stuffed Chicken Roll-ups

Ingredients

  • 4 chicken breasts
  • 200 g of cooked ham
  • 150 g of mozzarella or smoked scamorza cheese
  • 50 g of grated Parmesan cheese
  • Fresh sage

  • Extra virgin olive oil
  • Sprigs of rosemary
  • White wine for deglazing

Preparation

  1. Start by flattening the chicken breasts with a meat mallet until you get thin slices, to allow for easy rolling.

  2. On each slice of chicken, place a slice of cooked ham, then a slice of mozzarella or scamorza, and a sage leaf. If you like, you can also sprinkle a little Parmesan on each slice.

  3. Roll up the stuffed chicken breasts on themselves, forming compact roll-ups. Secure each roll-up with kitchen twine or toothpicks to keep them closed during cooking.

  4. In a non-stick frying pan, heat a drizzle of extra virgin olive oil and gently place the roll-ups in it. Brown the roll-ups on all sides until they are evenly golden.

  5. Deglaze with a bit of white wine and allow the alcohol to evaporate.

  6. Lower the heat, cover the pan, and let cook for about 20 minutes, turning the roll-ups occasionally to ensure even cooking.

  7. Once cooked, remove the kitchen twine or toothpicks and serve the roll-ups hot, perhaps with a squirt of lemon juice or a sprinkle of Parmesan.

  8. If desired, you can accompany the roll-ups with a side of vegetables or a fresh salad.
