Stuffed Avocado

The stuffed avocado is a tasty and very versatile dish. Here is a basic Italian recipe for preparing stuffed avocados that you can then customize to your liking.

Ingredients

  • 2 ripe avocados
  • 150g of cooked and peeled shrimp
  • Juice of 1/2 lemon
  • 2 tablespoons of mayonnaise
  • 1 teaspoon of mustard
  • Salt and pepper to taste
  • Chopped parsley (for garnish)
  • A few drops of Tabasco (optional)

Preparation

  1. Cut the avocados in half and remove the pit. With a spoon, gently scoop out the flesh of the avocados leaving a border of about half a centimeter to maintain the outer shape and place the flesh in a bowl.

  2. Mash the avocado flesh with a fork and season it with lemon juice to prevent it from browning.

  3. Add the shrimp (keeping some aside for garnish), mayonnaise, and mustard to the bowl. Mix well until you get a homogeneous mixture. At this point, if you like, you can add a few drops of Tabasco to give a spicy touch.

  4. Season with salt and pepper to taste.

  5. Fill the cavities of the avocados with the previously prepared mixture.

  6. Garnish with the shrimp set aside earlier and sprinkle with fresh chopped parsley.

  7. Let it rest in the refrigerator for about 30 minutes before serving, so that the flavors can blend together well.

The avocado is a very nutritious fruit, rich in good fats like oleic acid, which is a monounsaturated fat. Moreover, it is very versatile in the kitchen and lends itself to many variations on this recipe: for a vegetarian stuffing, for example, you can replace the shrimp with crumbled feta cheese and diced tomatoes or with corn and red beans for a more Tex-Mex touch.
