Stuffed Artichokes

Stuffed artichokes are a delicious dish from the Italian tradition, especially the Roman one. It is a rich and flavorful dish that can be served as an appetizer or as a side dish. Here is the recipe:

Ingredients

  • 4 artichokes
  • 2 cloves of garlic
  • 80 g of breadcrumbs
  • 40 g of grated parmesan cheese
  • Chopped parsley as needed
  • Salt as needed
  • Pepper as needed
  • Extra virgin olive oil as needed
  • 1 lemon
  • Water

Preparation

  1. Start by preparing the artichokes. Remove the outermost tough leaves and cut off the spiny tips. Rub the artichokes with a lemon cut in half to prevent them from blackening and open them slightly to stuff them.

  2. In a bowl, prepare the filling by mixing the breadcrumbs, chopped garlic, parmesan, parsley, salt, pepper, and a drizzle of extra virgin olive oil to obtain an even mixture.

  3. Take each artichoke and stuff it with the mixture, inserting it between the leaves and filling the center well.

  4. Arrange the stuffed artichokes in a pot wide and high enough so they can stand upright. Add about 2 cm of water to the bottom of the pot and drizzle extra virgin olive oil over the artichokes.

  5. Cover the pot with a lid and cook over low heat for about 40-50 minutes. The artichokes will be ready when the leaves pull away easily. During cooking, add more water if necessary to prevent them from drying out too much.

  6. Once cooked, let them cool down slightly before serving.

Curiosity

Stuffed artichokes are a classic of Roman cuisine, and each family has its own version. Some add minced anchovies or capers for an even more intense flavor. Moreover, according to tradition, they should be cooked with “coratella” (artichoke livers and hearts), but this practice is fading in favor of lighter recipes.
