Stuffed Artichoke Flan

I can guide you in the preparation of the stuffed artichoke flan, a refined and tasty dish that you can serve as an appetizer or as a vegetarian second course. Here are the ingredients and procedure.

Ingredients

  • 8 artichokes
  • 200 g of ricotta
  • 50 g of grated Parmesan
  • 1 egg
  • 1 lemon (juice)
  • Salt and pepper to taste
  • Breadcrumbs to taste
  • Chopped parsley to taste
  • 1 clove of garlic
  • Extra virgin olive oil to taste

Preparation

  1. First of all, clean the artichokes by removing the toughest outer leaves, the spiny tips, and the inner hay. As you clean them, put them in a bowl with water and lemon juice to prevent them from blackening.

  2. In a bowl, mix the ricotta with the grated Parmesan, egg, salt, pepper, and chopped parsley to create the filling. If you like, you can also add a pinch of nutmeg.

  3. Drain the artichokes from the acidulated water, gently open them in the center, and fill them with the ricotta and Parmesan mixture.

  4. Prepare a baking dish by greasing it with oil and place the stuffed artichokes in it. Sprinkle the artichokes with breadcrumbs and some flakes of butter or a drizzle of olive oil.

  5. Bake in a preheated oven at 180 °C for about 30-40 minutes, or until the artichokes are soft and the surface is golden brown.

  6. Let the stuffed artichoke flans cool down before serving.

Interesting Facts

The artichoke is a plant that has ancient origins, known and appreciated since Roman and Greek times not only for its unique flavor but also for its health benefits. The artichoke is rich in fibers, has diuretic properties, and helps regulate blood cholesterol levels. This recipe enhances the delicate flavor of the artichoke with the creaminess of the ricotta and the decisive taste of Parmesan.
