- 1 whole egg and 1 yolk
- 1 pinch of salt
- Zest of 1 lemon, grated
- 4-5 apples (Golden or Renette)
- 30 g of brown sugar
- 1 teaspoon of cinnamon powder
- 1 pinch of nutmeg (optional)
- Juice of 1/2 lemon
- 1 tablespoon of butter
- Raisins and pine nuts (to taste)
Preparation
- Start by preparing the shortcrust pastry. In a bowl, combine the flour, sugar, pinch of salt, and grated lemon zest. Add the cubed cold butter and work with the tips of your fingers until you get a sandy mixture.
- Make a well in the center and add the whole egg and the yolk, then quickly knead until you form a smooth ball. Wrap the pastry in cling film and let it rest in the fridge for at least 30 minutes.
- In the meantime, prepare the apple filling. Peel the apples, remove the core, and cut them into thin slices. Put them in a bowl with the lemon juice, brown sugar, cinnamon, and nutmeg, mixing gently. If desired, also add raisins and pine nuts.
- Preheat the oven to 180 °C.
- Take the pastry out of the fridge, roll it out with a rolling pin on a floured surface until it’s about 5 mm thick.
- Butter and flour a tart pan, then line it with the shortcrust pastry, leaving an edge of at least 1-2 cm.
- Pour the flavored apples into the tart, spreading them evenly. Distribute the tablespoon of butter in flakes over the apples.
- With the remaining pastry, you can create strips or decorations to place on the surface of the tart.
- Bake in the oven for about 40-45 minutes or until the pastry is golden and the apples are soft.
- Let it cool before serving.
