Stuffed and Fried Red Mullets

Ingredients

  • 4 fresh red mullets, gutted and headless
  • 50 g of breadcrumbs
  • 1 clove of garlic
  • Fresh parsley to taste
  • 1 tablespoon of salted capers
  • 10 pitted green olives
  • 1 egg
  • Salt to taste
  • Pepper to taste
  • Flour for dusting
  • Extra virgin olive oil for frying

Preparation

  1. Start by preparing the stuffing. Finely chop the garlic, parsley, capers (rinsed under cold water to remove the salt), and green olives.

  2. In a bowl, mix the breadcrumbs with the chopped garlic, parsley, capers, and olives. Add the egg, a pinch of salt and pepper. Blend well until the mixture is homogeneous.

  3. Gently open the red mullets like a book and stuff them with the prepared mixture.

  4. After stuffing them, coat the red mullets in flour, making sure to leave no empty spaces and taking care to cover the entire surface.

  5. Heat a generous amount of extra virgin olive oil in a pan and, when it’s hot, fry the red mullets until they are golden on both sides.

  6. Once cooked, drain them on paper towels to remove excess oil.

  7. Serve hot, perhaps accompanied by lemon wedges and a fresh seasonal salad.
