Stuffed Amaretti

Here is how to prepare a stuffed version of amaretti that brings with it a touch of sweetness perfect for concluding the day.

Ingredients

  • 200 g of blanched and peeled almonds
  • 200 g of sugar
  • 1 tablespoon of flour
  • 2 egg whites
  • Grated zest of 1 lemon
  • A pinch of salt
  • Apricot jam or another sweet filling of your choice (chocolate, hazelnut cream, etc.)

Preparation

  1. Start by finely grinding the almonds in a food processor until you get a powder.
  2. Mix the almond powder with the sugar, flour, pinch of salt, and lemon zest.
  3. Whip the egg whites to stiff peaks and gently fold them into the almond mixture, being careful not to deflate them to maintain aeration.
  4. Prepare a baking sheet lined with parchment paper.
  5. With slightly moist hands, form balls of the dough about 2 cm in diameter and place them on the baking sheet, leaving a bit of space between each one.
  6. Bake in a preheated oven at 180° C for about 15 minutes or until golden.
  7. Let the amaretti cool. Once cool, gently cut the top off and stuff each amaretto with a teaspoon of jam or your chosen filling.
  8. Replace the top and serve your stuffed amaretti.
