Ingredients
- 400 g of strozzapreti or other rustic pasta
- 300 g of fresh or frozen porcini mushrooms
- Fresh black truffle (quantity to taste)
- 2 cloves of garlic
- Chopped fresh parsley
- 200 ml of cooking cream (optional)
- Extra virgin olive oil
- Salt and pepper to taste
- Grated Parmesan or Pecorino cheese (to serve)
- Butter (optional)
Preparation

If using fresh porcini, clean them and cut them into small pieces. If they are frozen, let them thaw and then proceed as with fresh ones.

In a large pan, heat extra virgin olive oil and a piece of butter if used, add the garlic cloves and sauté.

Add the cut porcini and cook over medium heat until they are golden brown. Season with salt and pepper.

If you decide to use the cream, add it to the mushrooms and cook over low heat until you obtain a creamy sauce.

Meanwhile, cook the strozzapreti in a pot of boiling salted water following the package instructions.

Drain the pasta al dente, reserving some of the cooking water.

Transfer the pasta to the pan with the mushrooms and toss together, adding some of the reserved cooking water to bind the ingredients.

Add chopped fresh parsley and mix well.

Serve the dishes hot and finish by grating the fresh truffle generously directly over the pasta.

Add grated Parmesan or Pecorino cheese if desired and serve immediately.
