Cheesy Spinach Rice Flan

The Cheesy Spinach Rice Flan is a delicious and comforting dish. Here’s how to make it:

Ingredients

  • 200 g of rice
  • 200 g of fresh or frozen spinach
  • 2 eggs
  • 100 g of grated cheese (Parmesan or Pecorino, according to taste)
  • 100 g of mozzarella or another stringy cheese
  • 50 g of butter
  • Salt and pepper to taste
  • Nutmeg (optional)
  • Breadcrumbs to taste
  • Butter to taste, for greasing the mold

Preparation

  1. Cook the spinach in a pot with a bit of water and salt until soft. If they are frozen, follow the instructions on the package for defrosting and cooking.

  2. Meanwhile, boil the rice in salted water for about half the indicated time for complete cooking, as it will continue to cook in the oven.

  3. Drain the rice and run the spinach under cold water to stop the cooking, squeeze them well to remove all the excess water, and chop roughly.

  4. In a large bowl, beat the eggs with salt, pepper, and a grating of nutmeg. Add the grated cheese and mix well.

  5. Take the cooked rice and let it cool down. Then, add it to the egg and grated cheese mixture, along with the spinach and half of the diced mozzarella. Stir well to combine all the ingredients.

  6. Grease a flan mold and sprinkle it with breadcrumbs, removing the excess.

  7. Pour the mixture into the mold, leveling with a spoon. Add the remaining diced mozzarella on top.

  8. Bake in a preheated oven at 180° C for about 25-30 minutes, or until the flan is golden brown and stringy.

  9. Let the flan rest for a few minutes before unmolding and serving.
