Strawberry Strudel
17/11/2023The idea of a strawberry strudel is a great springtime twist on the more traditional apple strudel. The sweet scent of strawberries will be a delicious touch for this snack or dessert. Here’s the recipe to make a strawberry strudel.
Ingredients
- 1 rectangle sheet of puff pastry
- 500g of fresh strawberries
- 100g of granulated sugar (or to taste, depending on the sweetness of the strawberries)
- 30g of breadcrumbs
- Juice of 1/2 lemon
- 1 tablespoon of cornstarch (cornflour)
- Powdered sugar (optional, for decoration)
- 1 egg yolk (for brushing)
Preparation
- Preheat the oven to 180°C (350°F).
- Wash and cut the strawberries into small pieces, then place them in a bowl together with the sugar, lemon juice, and cornstarch. Mix well and let it rest for about 10-15 minutes so the strawberries release some juice and create a sort of compote.
- Roll out the puff pastry on a lightly floured surface.
- Spread the breadcrumbs evenly over the entire surface of the puff pastry; this will help absorb the extra moisture released by the strawberries during baking.
- Distribute the strawberries over the breadcrumbs, leaving a border of about 2 cm.
- Gently roll up the puff pastry, starting from the long side, to encase the strawberry filling inside.
- Seal the ends well and place the strudel seam side down on a baking sheet lined with parchment paper.
- Brush the strudel with the beaten egg yolk to get an even golden color during baking.
- Bake in the oven for about 30-40 minutes or until you see a nice golden color on the strudel’s surface.
- Let it cool for a few minutes before dusting with powdered sugar if desired.

Strudel is a dessert native to Central Europe, often associated with Austrian cuisine, but also widespread in Northern Italy, especially in the Trentino-Alto Adige region. The traditional version includes a filling of apples, raisins, pine nuts, and cinnamon.
