Strawberry Stick

The “Strawberry Stick” is a cool and delicious dessert, great for summer or for a sweet break during the day. Here’s how to prepare this tasty snack:

Ingredients

  • 500 grams of fresh strawberries
  • 100 grams of granulated sugar (or to taste, depending on the sweetness of the strawberries)
  • 200 ml of water
  • Juice of 1 lemon
  • Popsicle sticks

Preparation

  1. Start by washing the strawberries well, then remove the stems and cut them into pieces.
  2. Place the strawberries in a blender along with the granulated sugar and lemon juice. Blend everything until smooth.
  3. Strain the mixture through a sieve to remove the strawberry seeds and obtain a smooth puree.
  4. Prepare a simple syrup by bringing the 200 ml of water to a boil with a couple of tablespoons of sugar. Let it cool down.
  5. Combine the cooled syrup with the strawberry puree and mix well.
  6. Pour the mixture into popsicle molds, insert a stick into each one, and let it freeze for at least 4-6 hours, or better yet, overnight.
  7. Once the popsicles are ready, run the molds under warm water for a few seconds to help you unmold the Strawberry Sticks.

If you want to add an Italian touch to this recipe, you could also dip half of the popsicle in melted dark chocolate after unmolding it, and then let the chocolate solidify before serving. An alternative might be to add a bit of balsamic vinegar from Modena to the strawberry puree for a truly unique flavor contrast!
