Strawberry Pudding

Ingredients
- 500 g of fresh strawberries
- 100 g of sugar
- 250 ml of milk
- 3 sheets of gelatin (or 2 teaspoons of powdered gelatin)
- 200 ml of fresh cream
Preparation
- First, put the gelatin sheets in a bowl of cold water to soften for about 10 minutes. If you’re using powdered gelatin, follow the package instructions for soaking.
- Wash and cut the strawberries, setting some aside for decoration. Blend them with half of the sugar until you get a smooth puree.
- In a saucepan, heat the milk with the remaining sugar until the sugar has completely dissolved. It’s not necessary to bring it to a boil, but it should be warm.
- Squeeze the now softened gelatin sheets and add them to the warm milk, stirring until completely dissolved. If you’re using powdered gelatin, incorporate it directly into the warm milk following the instructions for dissolving.
- Now, add the strawberry puree to the milk and mix well.
- Whip the fresh cream and gently fold it into the milk and strawberry mixture, trying to keep its fluffiness as much as possible.
- Pour the mixture into pudding molds or into a single mold, depending on your preference.
- Let it cool in the refrigerator for at least 4 hours, or until the pudding has solidified.
- When ready to serve, flip the molds onto plates and decorate with the strawberries set aside.
For an all-Italian touch, you could add a few fresh mint leaves or a drizzle of reduced balsamic to garnish and add a unique flavor. And if you wish to pair your pudding with a wine, I suggest a light and sparkling Moscato d’Asti, which will pleasantly complement the taste of the strawberries.
