Strawberry Panna Cotta Cake

The strawberry panna cotta cake is a delicious and refreshing dessert, perfect for spring or summer. Here’s how to prepare it:

Ingredients

For the base:

  • 200 g of dry biscuits (like Digestive biscuits)
  • 100 g of melted butter

For the panna cotta:

  • 500 ml of fresh liquid cream
  • 150 g of sugar
  • 1 vanilla pod or 1 teaspoon of vanilla extract
  • 8 g of fish gelatine (sheet gelatin)

For the strawberry jelly:

  • 300 g of fresh strawberries
  • 70 g of sugar
  • Juice of 1/2 lemon
  • 5 g of fish gelatine (sheet gelatin)

Preparation

Base:

  1. Finely grind the biscuits in a mixer, or put them in a bag and crush them with a rolling pin until they reach a consistency similar to that of breadcrumbs.
  2. Melt the butter and mix it with the ground biscuits.
  3. Line the bottom of a cake tin with parchment paper and spread the biscuit mixture, pressing well to create a compact base. Refrigerate to set for at least 30 minutes.

Panna cotta:

  1. Soak the fish gelatine in cold water for about 10 minutes.
  2. In a small pot, heat the cream with the sugar and vanilla, without bringing it to a boil.
  3. Squeeze out the soaked gelatine and add it to the warm cream mixture, stirring until completely dissolved.
  4. Pour the panna cotta over the set biscuit base and let it cool. Then refrigerate for at least 4 hours.

Strawberry jelly:

  1. Soak the fish gelatine in cold water for about 10 minutes.
  2. Blend the strawberries with the sugar and lemon juice until smooth. Strain the mixture through a sieve to remove the seeds.
  3. Heat part of the strawberry mixture and dissolve the squeezed gelatine inside it, then mix it with the rest of the strawberry mixture.
  4. Gently pour the strawberry jelly over the set panna cotta, carefully so as not to scoop the surface.
  5. Refrigerate again for at least 2 hours, so that the jelly also sets.
