Ingredients
For the cookie base:
- 200 g of dry biscuits (like Digestive)
- 100 g of melted butter
For the strawberry mousse:
- 500 g of fresh strawberries (plus some for garnishing)
- 120 g of sugar
- 20 g of sheet gelatin (or agar-agar as a vegetarian alternative)
- 250 ml of fresh cream for whipping
For the strawberry jelly (optional):
- 200 g of strawberries
- 50 g of sugar
- 10 g of sheet gelatin

Start with the cookie base: finely chop the biscuits in a mixer and mix everything with the melted butter. Press the mixture into a springform pan lined with parchment paper to create a compact base. Refrigerate to set.

For the mousse, soak the gelatin in cold water for about 10 minutes. Blend the strawberries with sugar until you get a smooth puree.

Heat a small part of the strawberry puree and dissolve the well-drained gelatin. Add this mixture to the remaining strawberry puree and mix well.

Whip the cream and gently fold it into the strawberry puree to obtain a homogeneous mixture. Pour the mousse over the firmed cookie base and leave in the refrigerator for at least 4 hours, until it has set well.

For the strawberry jelly, if you decide to add this step for a more refined effect, soak the gelatin as before. Puree the strawberries with the sugar and then strain to remove the seeds. Heat a bit of the juice, dissolve the soaked gelatin, and combine with the rest of the juice. Let it cool slightly, and then gently pour it over the set mousse. Place back in the fridge for at least another hour.
