Strawberry Mille-Feuille

Ingredients

  • 3 sheets of ready-rolled puff pastry (about 230 g each)
  • 500 g of fresh strawberries
  • 500 ml of pastry cream
  • Powdered sugar (for dusting)
  • 300 ml of whipping cream
  • 2 tablespoons of granulated sugar

Preparation

  1. Start by preheating your oven to 200 °C.
  2. Unroll the puff pastry sheets and dock them with a fork to prevent them from puffing up too much during baking. Bake in the oven for about 10-15 minutes or until they turn golden and crispy. Allow them to cool.
  3. Meanwhile, wash and slice the strawberries. Set them aside.
  4. Whip the cream with two tablespoons of granulated sugar until it is stiff, and gently fold it into the pastry cream to obtain a lighter and fluffier cream.
  5. Now, it’s time to assemble the mille-feuille. Place the first layer of puff pastry on a plate and spread a third of the cream over the surface. Add a layer of strawberry slices.
  6. Repeat the process with the other two layers of puff pastry, cream, and strawberries.
  7. Finally, dust the surface of the mille-feuille with powdered sugar for a decorative finishing touch.
