Indulgent Strawberry Cheesecake
17/11/2023Here is a delicious recipe for an Indulgent Strawberry Cheesecake, revisited with an Italian touch.
Ingredients
For the base:
- 200 g of dry biscuits (like Digestive)
- 100 g of melted butter
For the cream:
- 500 g of cream cheese (like Philadelphia)
- 120 g of icing sugar
- 1 teaspoon of vanilla extract
- 200 ml of fresh cream to whip
For the topping:
- 300 g of fresh strawberries
- 3 tablespoons of sugar
- 1 lemon (the juice)
- A few mint leaves for decoration (optional)
Preparation

Start preparing the base by finely crushing the biscuits and combining them with the melted butter, until a uniform mixture is obtained. Press the mixture into the bottom of a springform pan, creating an even layer. Put in the fridge to firm up for at least 30 minutes.

For the cream, mix the cream cheese with icing sugar and vanilla extract in a bowl until smooth and homogeneous.

In another bowl, whip the fresh cream until it becomes foamy and stiff, then gently fold it into the cheese mixture, using a spatula to maintain the air in the cream.

Pour the cream over the now firm biscuit base and level the surface. Put it back in the refrigerator for at least 4 hours, better if overnight.

For the topping, wash and cut the strawberries into small pieces. Put them in a pan with sugar and lemon juice, and cook over low heat until a slightly thickened sauce is created but still with visible pieces of strawberry. Allow to cool.

Once the cheesecake is well set, remove it from the mold and pour the strawberry sauce over it.

Decorate with a few fresh mint leaves, if desired, for a touch of color and freshness.
