Strawberry Grape Sorbet

Ingredients
- 500 g of ripe strawberry grapes
- 150 g of sugar
- The juice of 1 lemon
- 100 ml of water
- A handful of fresh mint leaves for garnish (optional)
Preparation
- Start by washing the strawberry grapes under running water and then drying them carefully.
- Meanwhile, prepare a simple syrup by dissolving the sugar with the 100 ml of water in a saucepan. Bring to a boil and then let it simmer for about 5 minutes. Turn off the heat and let it cool completely.
- Remove the grape berries from the stems and put them in a blender or food processor. Add the lemon juice and blend everything until it is smooth.
- Strain the blended mixture through a fine mesh strainer to remove the grape skins and seeds. Press well with a spoon to extract as much juice and pulp as possible.
- Add the cold syrup to the grape juice and mix well.
- Pour the mixture into an ice cream maker and follow the instructions for your machine to churn it. If you don’t have an ice cream maker, pour the mixture into a container and place it in the freezer, stirring every 30-45 minutes to break up the ice crystals until the sorbet is the desired consistency.
- Serve the strawberry grape sorbet in small bowls, perhaps garnished with a few fresh mint leaves.

Strawberry grape has a particular sweetness and an intense aroma, perfect for creating a sorbet. This fruit is not available all year round, so this is a recipe to exploit during the period when grapes are in season. In Italy, sorbet is often served between courses in a more formal meal to “cleanse the palate”.
