Strawberry Grape Risotto
17/11/2023Strawberry grape risotto is a delicate and tasty autumnal dish that combines the creaminess of the rice with the sweetness of the grapes. Here is the recipe for four people:
Ingredients
- 320 g of risotto rice (such as Arborio or Carnaroli)
- 1 bunch of strawberry grapes
- 1 shallot
- 1/2 glass of dry white wine
- 1 liter of hot vegetable broth
- 50 g of butter
- 50 g of grated Parmesan cheese
- Salt and pepper to taste
- Extra virgin olive oil
Preparation
- Begin by washing the grapes thoroughly, detach the berries from the bunch, and if necessary, remove the seeds.
- Take a shallot, peel it and chop it finely. In a large saucepan, sauté the chopped shallot in a drizzle of extra virgin olive oil until it becomes translucent.
- Add the rice to the pot, toast it for a couple of minutes stirring constantly until the grains become pearl-like.
- Deglaze with white wine and let it evaporate over medium heat.
- Start adding a ladle of broth at a time, stirring frequently and waiting for the liquid to be almost completely absorbed before adding the next ladle.
- Midway through cooking, add half of the strawberry grapes, allowing them to cook with the rice and release some of their sweet flavor.
- Continue to add broth and stir until the rice is cooked yet still al dente (it usually takes about 18 minutes).
- When the rice is just right, remove the pot from the heat, add the cold pieces of butter, and grated Parmesan cheese. Mix well to cream the risotto.
- Add the rest of the strawberry grapes, gently mix to distribute the berries evenly.
- Let the risotto rest for a minute, adjust salt and pepper, and then serve immediately, nice and hot.
For an even richer and more autumnal variant, you could consider adding diced speck during the sauté or some walnut kernels for added crunch. And for a final touch that enhances the flavors, you could garnish with fresh basil leaves or a drizzle of raw olive oil.
