Strawberry Glazed Swirls
17/11/2023Strawberry glazed swirls are a delicious dessert to enjoy as a snack or at the end of a meal. They are a delicious and fruity variant of the classic sweet swirls. Here is the recipe to prepare them:
Ingredients

For the swirls dough:
- 3 eggs
- 100 g of sugar
- 100 g of all-purpose flour
- 1 teaspoon of baking powder
- A pinch of salt

For the filling and glaze:
- 200 g of fresh strawberries
- 100 g of powdered sugar
- 250 g of ricotta or mascarpone
- 1 sachet of vanillin
- Lemon juice (to taste)
Preparation
- Start by whipping the eggs with the sugar until you have a light and fluffy mixture.
- Gradually add the sifted flour with the baking powder and salt, blending gently to not deflate the mixture.
- Pour the dough into a rectangular baking tray lined with parchment paper and spread it out evenly.
- Bake in a preheated oven at 180 °C for about 10-12 minutes. The dough should be golden and soft to the touch.
- Meanwhile, prepare a mixture of blended strawberries with powdered sugar and a few drops of lemon juice.
- Once the dough is baked, turn it out onto a damp kitchen towel and spread it out gently. Spread the strawberry and ricotta or mascarpone mixture over the entire surface.
- Carefully roll up the dough on itself, starting from the longer side, wrapping it in the kitchen towel. Let it cool for about an hour.
- Prepare a glaze by blending some strawberries with powdered sugar and a few drops of lemon juice to obtain a smooth and not too liquid consistency.
- Once the roll is cooled, remove the kitchen towel and cut the swirl into slices about 2 cm thick. Place the swirls on a wire rack and pour the strawberry glaze over them.
- Let the glaze set before serving the swirls.

Swirls are a very versatile preparation and can be made with numerous fillings and coverings. The strawberry variant is particularly suitable for spring and summer when these fruits are at the peak of their seasonality.
