Strawberry Delights

Here is the recipe for Strawberry Delights, a wonderful dessert that combines the sweetness of strawberries with the lightness of a fluffy cream and a soft sponge cake.

Ingredients

For the Sponge Cake:

  • 4 eggs
  • 120 g of sugar
  • 120 g of flour
  • A pinch of salt
  • Grated zest of 1 lemon

For the Chantilly Cream:

  • 250 ml of fresh cream
  • 50 g of powdered sugar
  • 1 vanilla pod

For the Syrup:

  • 100 ml of water
  • 50 g of sugar
  • A shot of strawberry liqueur (optional)

For the Filling and Decoration:

  • 500 g of fresh strawberries
  • Powdered sugar as needed

Preparation

  1. Start with the Sponge Cake. Preheat the oven to 180 °C (356 °F). Beat the eggs with the sugar until the mixture is frothy and very light. Gently fold in the sifted flour with a pinch of salt and lemon zest.
  2. Pour the batter into a previously buttered and floured cake tin and bake for about 20-25 minutes.
  3. Once baked, let it cool completely before proceeding to cut it into horizontal layers.

For the Chantilly Cream:

  1. Whip the very cold cream with the powdered sugar and vanilla until firm.

For the Syrup:

  1. In a saucepan, bring the water and sugar to a boil, let it cool, and add the strawberry liqueur if you decide to use it.

Assembling:

  1. Use the first layer of sponge cake as a base, and moisten it with the syrup.
  2. Cover with a layer of chantilly cream and add the strawberries cut into small pieces.
  3. Place the second layer of sponge cake on top, moisten this as well and cover again with the cream and strawberries.
  4. Top with the last layer of sponge cake and finish by covering the surface and sides with chantilly cream.
  5. Decorate with whole or sliced strawberries and dust with powdered sugar before serving.

For an Italian touch, you could choose to enrich the cream with mascarpone, giving it a fuller consistency and a more pronounced flavor in true Italian style.
