Strawberry Crepe Pouches

Begin by preparing the crepe batter, mixing the flour with a pinch of salt. Make a well and add the eggs, starting to mix from the center and gradually incorporating the flour. Add the milk a little at a time, continuing to mix to avoid lumps, and finally incorporate a tablespoon of sugar. Let the batter rest for about 30 minutes.

Meanwhile, clean the strawberries by removing the stem and cut them into pieces. Place them in a bowl with the lemon juice and the remaining sugar. Mix and let them macerate for about 20 minutes so that a sort of natural syrup is formed.

Lightly grease a crepe pan (or a regular non-stick pan) with butter and heat it over medium-high heat. Pour a ladle of batter into the pan and tilt it to spread the batter evenly. Cook the crepe for about 1-2 minutes on each side until golden. Repeat with the rest of the batter.

Prepare the filling by working the ricotta with a tablespoon of powdered sugar until you get a smooth cream. You can also use mascarpone or whipped cream.

To assemble the pouches, lay a crepe on a plate, spread a spoonful of filling in the center, and some of the macerated strawberries. Close the crepe by folding the edges towards the center, creating a pouch. Dust with powdered sugar and decorate with mint leaves if desired.
