Strawberry Coulis
17/11/2023Here is the recipe to make a delicious strawberry coulis, a sweet and versatile sauce that can accompany spoon desserts, ice creams, or to add a touch of color and flavor to more elaborate sweets.
Ingredients
- 500 g of fresh strawberries
- 100 g of sugar (or to taste, depending on the sweetness of the strawberries)
- Juice of 1 lemon
Preparation
- Wash the strawberries under running water and remove the stem.
- Cut the strawberries in half or quarters, depending on the size, and put them in a blender or food processor.
- Add the sugar and lemon juice.
- Blend everything until you get a smooth puree.
- Strain the puree through a fine sieve to remove the seeds and obtain a smooth and velvety sauce.
- If the coulis is too thick, you can add a little water or lemon juice to reach the desired consistency.
- Taste and adjust the sugar if necessary.
At this point, your strawberry coulis is ready to be used!

This sauce originates in France, where “coulis” initially referred to a highly concentrated meat or fish broth. The term has since evolved to describe filtered fruit or vegetable purees used as sauces. Strawberry coulis is particularly popular in spring and summer when strawberries are in full season and offer the best flavor.
