Strawberry Cheesecake

Strawberry cheesecake is a fresh and delicious dessert that combines the creaminess of cheesecake with the tanginess of strawberries. Here I propose a no-bake version, perfect for the warmer periods.

Ingredients

  • 250g of Digestive biscuits (or another dry biscuit of your choice)
  • 100g of melted butter
  • 500g of cream cheese (like Philadelphia)
  • 120g of powdered sugar
  • 1 packet of vanilla powder
  • 250ml of whipping cream
  • 1 pack of sheet gelatin (10g)
  • 300g of fresh strawberries
  • Juice of half a lemon

For the strawberry gelatin topping:

  • 200g of fresh strawberries
  • 2 tablespoons of sugar
  • 1 sheet of gelatin (or agar agar following the package instructions)

Preparation

  1. Begin by finely chopping the biscuits in a mixer or by placing them in a bag and rolling over them with a rolling pin. Mix the chopped biscuits with the melted butter until you have a homogeneous consistency.
  2. Spread the biscuit mixture on the bottom of a springform pan (preferably 22 cm in diameter) lined with parchment paper, pressing down well to form a compact base. Put in the refrigerator for at least 30 minutes.
  3. In the meantime, soak the sheet gelatin in cold water for 10 minutes.
  4. Wash and cut the strawberries (keeping some aside for decoration) and blend them with the lemon juice.
  5. In a bowl, mix the cream cheese with the powdered sugar and vanilla powder until you obtain a smooth and lump-free mixture.
  6. Squeeze out the gelatin and warm it briefly to dissolve it, then incorporate it into the strawberry puree. Add this mixture to the cheese and blend well.
  7. Whip the cream and gently fold it into the cheese and strawberry mixture.
  8. Pour the mixture onto the now cooled biscuit base and let it rest in the refrigerator for at least 4 hours, better if overnight.
  9. For the strawberry gelatin, blend the strawberries with the sugar and strain the mixture to remove the seeds. Soak the gelatin as done previously, dissolve it and add it to the strawberry puree. Let it cool slightly and then pour over the already firmed cheesecake.
  10. Put the cheesecake back in the refrigerator for at least 1 hour before serving.
