Strawberry and Mascarpone Baked Cheesecake

Ingredients

  • 250 g of Digestive biscuits
  • 100 g of unsalted butter (melted)
  • 500 g of mascarpone
  • 250 g of ricotta (or cream cheese)
  • 150 g of sugar
  • 4 large eggs
  • 1 vanilla pod (or 1 teaspoon of vanilla extract)
  • Zest of 1 lemon
  • 1 pinch of salt
  • 300 g of fresh strawberries
  • 2 tablespoons of powdered sugar
  • A few strawberries for garnish
  • Fresh mint (optional for garnish)

Preparation

  1. Start with the base: finely chop the Digestive biscuits in a food processor. Melt the butter and mix it with the chopped biscuits until evenly combined.
  2. Press the biscuit mixture onto the bottom of a 20-22 cm diameter springform pan that has been previously buttered or lined with parchment paper. Refrigerate to set while you prepare the filling.
  3. Preheat the oven to 160°C.
  4. In a large bowl, mix the mascarpone with the ricotta until smooth. Add the sugar and mix well.
  5. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla, lemon zest, and pinch of salt.
  6. Pour the filling mixture over the cooled biscuit base and level the surface with a spatula.
  7. Bake the cheesecake for about 1 hour or until the center is just wobbly but not completely firm.
  8. Remove the cheesecake from the oven and let it cool completely at room temperature. Then refrigerate for at least 4 hours, preferably overnight.
  9. Clean and chop the strawberries. Place them in a saucepan with powdered sugar and a little water, then cook over low heat until a strawberry sauce forms. Let cool.
  10. Once cool, remove the cheesecake from the fridge, gently release the sides of the springform pan, and place it on a serving plate.
  11. Pour the cold strawberry sauce over the top and garnish with fresh strawberries and mint leaves.
