Strawberry and Whipped Cream Roll

Ingredients
- 4 eggs
- 100 g of sugar
- 100 g of 00 flour
- 1 sachet of vanillin or a teaspoon of vanilla extract
- Pinch of salt
- Powdered sugar (for decoration)
- 250 ml of whipping cream
- 2 tablespoons of powdered sugar (for the cream)
- 300 g of fresh strawberries
Preparation
- Preheat the oven to 180 °C and line a baking tray with parchment paper.
- Separate the yolks from the whites. Whip the whites until very firm with a pinch of salt.
- In a separate bowl, beat the yolks with the sugar until you have a frothy and clear mixture, then add the vanillin.
- Gently fold the sifted flour into the yolk and sugar mixture, mixing from the bottom up so as not to deflate the mixture.
- Gradually add the whipped whites, combining with gentle movements to keep it fluffy.
- Pour the mixture into the prepared baking tray, leveling it with a spatula to ensure an even thickness.
- Bake in the oven for 10-12 minutes, until the roll is golden and soft to touch.
- Once baked, immediately overturn the sponge onto a damp kitchen cloth and gently roll it out. Remove the parchment paper and roll the sponge together with the cloth. Let it cool completely.
- Meanwhile, whip the cream with two tablespoons of powdered sugar until it is firm.
- Cut the strawberries into pieces, leaving some whole for the final decoration.
- Gently unroll the cooled sponge, spread the whipped cream on top and distribute the cut strawberries.
- Roll up the sponge again, this time filled with the cream and strawberries, without the cloth.
- Wrap the roll in cling film and let it rest in the refrigerator for at least one hour before serving.
- Before serving, decorate with powdered sugar and the strawberries set aside.
