Strawberry Cake with Chantilly Cream

Ingredients
- 4 eggs
- 200 g of sugar
- 200 g of type 00 flour
- 1 packet of baking powder
- 1 pinch of salt
- Vanilla essence or the seeds of a vanilla bean
- 500 ml of fresh cream for whipping
- 75 g of powdered sugar (for the Chantilly cream)
- 500 g of fresh strawberries (keep aside some nice strawberries for decoration)
- Powdered sugar to dust
Preparation
- Start with the cake base: whip the eggs with the sugar until you get a fluffy and frothy mixture. Add a pinch of salt and vanilla essence.
- Gently fold in the sifted flour with the baking powder, stirring gently from top to bottom to avoid deflating the mixture.
- Pour the batter into a buttered and floured cake tin (or lined with parchment paper) and bake in a preheated oven at 180 °C for about 30 minutes, or until a skewer inserted into the center comes out clean.
- While the base is baking, you can prepare the Chantilly cream: whip the well-chilled fresh cream, gradually adding the powdered sugar until it is firm and swollen.
- Wash and cut the strawberries into pieces (except those for decoration) and mix with a bit of sugar if you like the fruit sweeter.
- Once the cake base is cooked and cooled, slice it horizontally into two or three layers, depending on the desired thickness.
- Fill each layer with a generous amount of Chantilly cream and chopped strawberries, then gently layer them.
- Cover the top layer and the sides of the cake with the remaining Chantilly cream and decorate with the strawberries set aside.
- Dust with powdered sugar before serving.
