Stracciatella Ice Cream Cake Slices

The stracciatella ice cream cake slices are a fresh and delicious dessert, perfect for warm seasons or to end a meal sweetly. Here’s how to make it:

Ingredients

  • 200 ml of fresh cream to whip
  • 200 g of dark chocolate
  • 300 ml of condensed milk
  • 1 teaspoon of vanilla extract (or the seeds of a vanilla bean)
  • 100 g of coarsely chopped dark chocolate (for the stracciatella effect)

Preparation

  1. Start by whipping the fresh cream until it is firm yet still soft.
  2. Melt the 200 g of dark chocolate in a double boiler or microwave, being careful not to overheat it. Let it cool slightly.
  3. In a large bowl, mix the condensed milk with the vanilla extract.
  4. Gently fold the whipped cream into the condensed milk and vanilla mixture, moving the spoon from the bottom up to not deflate the mixture.
  5. Take about a third of the mixture and combine it with the melted dark chocolate, stirring to obtain an even color.
  6. At this point, add the coarsely chopped chocolate to the white mixture to create the stracciatella effect.
  7. Use a springform pan or a silicone cake mold. Pour in the chocolate mixture first to create the base and then add on top the white mixture with chocolate flakes.
  8. Smooth the surface well and place in the freezer for at least 4 hours, or until the ice cream is well solidified.
  9. When ready to serve, carefully remove the ice cream cake from the mold and let it soften for a few minutes at room temperature before cutting it into slices.

Curiosity

The stracciatella ice cream cake slices are a homemade variant of the historic ice cream flavor born in Italy. The word “stracciatella” comes from the Italian verb “stracciare,” which means to “tear” or “make little pieces,” referring to the chopped chocolate that is mixed into the vanilla ice cream to give the characteristic appearance of “torn” chocolate. This type of preparation is very scenic if presented at the table and sure to impress guests.
