Stracciatella Ice Cream Cake
17/11/2023Here is the recipe for a delicious Stracciatella Ice Cream Cake, a frozen and tempting version of the classic Italian ice cream flavor.
Ingredients
- 200 ml of fresh cream to whip
- 1 can of condensed milk (about 397 g)
- 100 g of dark chocolate
- 1 teaspoon of vanilla extract
- Dry biscuits (like Digestive) for the base, about 200-250 g
- 100 g of melted butter
Preparation
- Start by preparing the base of the ice cream cake. Finely chop the biscuits in a mixer or put them in a food bag and crush them with a rolling pin until you get fine crumbs.
- Mix the biscuit crumbs with the melted butter until you have a homogeneous mixture. Press this mixture on the bottom of a springform pan (preferably 22-24 cm in diameter) lined with parchment paper, creating a compact base. Put in the refrigerator to cool while you prepare the rest.
- Whip the fresh cream, adding the vanilla extract towards the end of whipping. The cream should be firm but still soft.
- Gently fold the condensed milk into the whipped cream, trying not to deflate the mixture.
- Cut the dark chocolate into shavings or very small pieces (you can use a knife or grate it).
- Gently fold the chocolate shavings into the cream and condensed milk mixture.
- Pour the mixture over the biscuit base as evenly as possible.
- Cover with plastic wrap and put in the freezer for at least 4-5 hours, or even better, overnight.
- Before serving, remove the Stracciatella Ice Cream Cake from the freezer and let it sit at room temperature for a few minutes to make it easier to cut.
