Stracciatella and Anchovy Crostini

Ingredients

  • Slices of homemade bread or baguette
  • Burrata’s stracciatella cheese
  • Oil-preserved anchovies
  • Cherry tomatoes
  • Extra virgin olive oil
  • Fresh or dried oregano
  • Salt
  • Pepper

Preparation

  1. Begin by toasting the bread slices in the oven or on a grill until they are crispy and golden. If preferred, you can also rub them lightly with a clove of garlic to add a hint of flavor.
  2. While the bread is toasting, prepare the cherry tomatoes by cutting them in half or quarters, depending on size.
  3. Drain the oil-preserved anchovies to remove excess oil.
  4. Once the bread is ready, let it cool for a moment. Then, lay a generous spoonful of stracciatella on top of each slice.
  5. Add two or three halves of cherry tomatoes and one or two anchovies on each crostino.
  6. Season with a drizzle of extra virgin olive oil, a sprinkle of oregano, salt and pepper to taste.
