Ingredients
- Slices of homemade bread or baguette
- Burrata’s stracciatella cheese
- Oil-preserved anchovies
- Cherry tomatoes
- Extra virgin olive oil
- Fresh or dried oregano
- Salt
- Pepper
Preparation
- Begin by toasting the bread slices in the oven or on a grill until they are crispy and golden. If preferred, you can also rub them lightly with a clove of garlic to add a hint of flavor.
- While the bread is toasting, prepare the cherry tomatoes by cutting them in half or quarters, depending on size.
- Drain the oil-preserved anchovies to remove excess oil.
- Once the bread is ready, let it cool for a moment. Then, lay a generous spoonful of stracciatella on top of each slice.
- Add two or three halves of cherry tomatoes and one or two anchovies on each crostino.
- Season with a drizzle of extra virgin olive oil, a sprinkle of oregano, salt and pepper to taste.
- Serve the crostini immediately to fully enjoy their crispiness and the contrast with the softness of the stracciatella.
