Ingredients
- 1 sea bass of about 400-500g, cleaned and gutted
- Variety of seasonal vegetables (e.g., zucchini, carrots, green beans, asparagus)
- 1 lemon

- Salt and pepper to taste
- Extra virgin olive oil
Preparation
- Start by preparing the vegetables. Wash them thoroughly and cut them into not too small pieces, keeping a certain uniformity in size to allow for even cooking.
- If you have a steamer, place the vegetables at the bottom of the lower part and add enough water to produce steam. If you do not have a steamer, you can use a simple colander placed in a large pot, making sure that the water does not touch the vegetables.
- Place the cleaned sea bass on the upper part of the steamer (or on a second colander). Make some cuts on the back and insert some slices of lemon and sprigs of thyme or other aromatic herbs into the cuts. Season it with salt and pepper both inside and out.
- Put the lid on and turn on the heat. The cooking time for the vegetables will depend on the type and the cut, but generally, it will take about 15-20 minutes to obtain crunchy vegetables. The sea bass will cook in 10-15 minutes, depending on the size.
- Once cooked, dish up the sea bass on a bed of seasonal vegetables, dress everything with a drizzle of extra virgin olive oil, and serve hot.
