Steamed Salmon with Broccoli Cream

Ingredients

  • 4 salmon steaks of about 150g each
  • 1 large broccoli
  • 2 cloves of garlic
  • Extra virgin olive oil to taste
  • Salt and pepper to taste
  • Juice of 1/2 lemon
  • Water or vegetable broth to taste

Preparation

  1. Clean the broccoli, divide it into florets, and steam for about 15-20 minutes or until tender.

  2. Meanwhile, prepare the salmon: wash the steaks and pat them dry with kitchen paper. Season with a little salt and pepper, and drizzle with lemon juice.

  3. Place the salmon in a steamer basket and cook over boiling water for about 10-15 minutes, depending on the thickness of the steaks and how well you like your salmon cooked.

  4. While the salmon and broccoli are cooking, take a frying pan, add a drizzle of oil, and the peeled garlic cloves and fry until they are golden brown.

  5. Once the broccoli is cooked, remove the garlic from the pan and add the broccoli. Mash with a fork or use an immersion blender to achieve a finer cream, adding water or vegetable broth to reach the desired consistency. Season with salt and pepper.

  6. Arrange a bed of broccoli cream on each plate, place the steamed salmon steak on top, and garnish with a drizzle of olive oil and a pinch of pepper.
