Steamed Cod with Green Olives and Cherry Tomatoes

Ingredients
- 4 cod fillets (about 150-200 grams each)
- 200 grams of cherry tomatoes
- 100 grams of pitted green olives
- Salt to taste
- Pepper to taste
- Extra virgin olive oil
- 1 clove of garlic
- Freshly chopped parsley
- Lemon juice (optional)
- White wine (optional)
Preparation
- Start by washing the cherry tomatoes and cutting them in half. Set aside.
- Take the green olives and, if they are not already pitted, remove the stones.
- Bring water to a boil in a pot large enough to contain a steaming basket.
- Meanwhile, prepare the cod fillets by drying them with paper towels, then season both sides with salt and pepper to taste.
- When the water is boiling, place the fillets in the steaming basket, cover with a lid and let them cook for about 6-8 minutes, depending on the thickness of the fillets.
- While the cod is cooking, heat some extra virgin olive oil in a pan and add a garlic clove. Let it fry lightly.
- Add the cherry tomatoes and green olives to the pan. If you like, you can deglaze with a bit of white wine. Cook for a few minutes until the cherry tomatoes start to break down, creating a light sauce.
- Once the cod fillets are ready, remove them from the water and place them on the plates.
- Dress the cod with the sautéed tomatoes and olives, and sprinkle with freshly chopped parsley. If desired, add a drizzle of lemon juice for an extra touch of freshness.
