Steamed Cod Fillets with Potatoes

Ingredients
- 4 cod fillets (fresh or frozen)
- 4 medium potatoes
- Fine salt
- Freshly ground black pepper
- Chopped fresh parsley (optional)
- Extra virgin olive oil
- Lemon juice
Preparation
- Start by washing the potatoes well. If you prefer, you can peel them, but for a more rustic version, you can also cook them with the skin on, provided they are well cleaned.
- Cut the potatoes into slices about half a centimeter thick and place them in a pot suitable for steam cooking.
- Rinse the cod fillets under cold running water and dry them by patting with kitchen paper.
- In a suitable pot, fill the bottom with water without touching the steamer basket and bring to a boil.
- Lay the potatoes in the steamer basket and lightly sprinkle them with salt. Cover with a lid and let cook for about 10 minutes.
- Then, add the cod fillets on top of the potatoes, salt and pepper to taste. If the cod comes from the freezer, make sure it has been thawed beforehand.
- Cover with the lid and let steam for another 8-10 minutes or until both the cod and the potatoes are cooked. The cod will be ready when the flesh turns opaque and flakes easily.
- In the meantime, prepare a simple emulsion by mixing the extra virgin olive oil with lemon juice to taste, add a pinch of salt and mix.
- Serve the steamed cod fillets and potatoes while hot, drizzling them with the olive oil and lemon emulsion and, if desired, sprinkling with chopped fresh parsley.
An Italian twist can be to add a touch of Genoese pesto over the cod before serving, to give a more intense aroma and a splash of color.
