Chinese Steamed Ravioli with Vegetables

Start by preparing the dough for the ravioli: pour the flour into a bowl, add a pinch of salt, and drizzle in the lukewarm water mixed with the oil. Knead the dough until you obtain a smooth and elastic ball. Cover it with a damp cloth and let it rest for at least 30 minutes.

For the filling, finely chop the cabbage, carrots, mushrooms, green onion, garlic, and ginger. Sauté the mixture in a pan with a drizzle of oil until softened. Add the soy sauce and sesame oil, stir, and adjust the salt and pepper. Let it cool.

Roll out the dough for the ravioli with a rolling pin until you get a thin sheet, then use a round cutter or a glass to cut out circles.
