Green Peppercorn Fillet without Butter

  3. Once cooked, remove the fillets from the skillet and set them aside to keep warm.

  4. In the same skillet, add the finely chopped shallot and let it sauté slightly. Add the green peppercorns, crushing them gently with the back of a spoon to release their aroma.

  5. Deglaze with the brandy or cognac and let the alcohol evaporate.

  6. Add the meat broth and let it reduce by about a third.

  7. Add the cream and continue cooking until the sauce reaches a creamy consistency. Taste and adjust the salt if necessary.

  8. Put the fillets back in the skillet with the green peppercorn sauce and let them flavor for a minute.

  9. Serve the beef fillets with the green peppercorn sauce, garnishing with chopped parsley if desired.
