Beef Tenderloin with Balsamic Vinegar

Ingredients
- 4 beef tenderloin steaks (about 200-250 g each)
- Salt and pepper to taste
- Extra virgin olive oil
- 1 sprig of fresh rosemary
- 2 cloves of garlic
- 60 ml of balsamic vinegar
- 30 ml of red wine
- 1 teaspoon of brown sugar (optional)
- 30 g of cold butter, cubed
Preparation
- Remove the meat from the refrigerator at least 30 minutes before cooking to bring it to room temperature. This ensures more even cooking.
- Heat a pan over medium-high heat and add a drizzle of extra virgin olive oil.
- Season the beef tenderloins with salt and pepper, then sear them in the pan for about 2-3 minutes per side until well browned on the outside. If you like the meat more or less cooked, you can adjust the cooking times to your liking.
- Lower the heat, add the crushed garlic and rosemary to the pan, and cook for a minute to flavor the oil.
- Remove the tenderloins from the pan and let them rest covered with aluminum foil.
- In the same pan, add the balsamic vinegar and red wine. If you like a touch of sweetness, also add the teaspoon of brown sugar.
- Let the liquid reduce by half over medium-low heat, stirring occasionally to blend the flavors.
- Take the pan off the heat and remove the garlic and rosemary. Add the cold cubed butter, stirring quickly to thicken the sauce and make it glossy and creamy.
- Slice the tenderloins if desired and arrange them on plates.
- Cover the meat with the balsamic vinegar sauce and serve immediately.
