Squid with Peas

Squid with peas is a simple and flavorful dish, typical of Italian cuisine. Here is the recipe to prepare it:

Ingredients

  • 500 g of cleaned squid cut into rings
  • 300 g of fresh or frozen peas
  • 1 small onion finely chopped
  • 2 cloves of garlic, chopped
  • 200 ml of tomato puree
  • 100 ml of white wine
  • Extra virgin olive oil as needed
  • Salt and pepper as needed
  • Chopped parsley for garnish
  • Water or fish stock if necessary

Preparation

  1. In a large pan, heat a drizzle of extra virgin olive oil and add the chopped onion and garlic. Sauté over medium heat until they become transparent.
  2. Add the squid rings and brown them for a few minutes until they start to become opaque.
  3. Deglaze with the white wine and let the alcohol evaporate on high heat.
  4. Add the tomato puree, peas, salt and pepper. If necessary, add a little water or fish stock to prevent the sauce from drying out too much.
  5. Cover and let cook on low heat for about 20-30 minutes or until the squid is tender and the peas are cooked. During cooking, check occasionally and add liquid if it dries out too much.
  6. Once ready, sprinkle with freshly chopped parsley to garnish.

Cooking squid needs to be carefully managed, as overcooking can make it rubbery. One secret is to keep it moist and cook it on low heat to maintain its tenderness. This dish is great served with crispy bread or a portion of white rice to soak up the sauce.
