Squid Skewers

Preparing squid skewers is a great way to enjoy this mollusk in a simple and delicious way. Here is the recipe for grilled skewers with an Italian twist.

Ingredients

  • 500 g of cleaned squid
  • 2 cloves of garlic
  • Extra virgin olive oil
  • Chopped fresh parsley
  • Salt and pepper to taste
  • Lemon juice
  • Lemon slices for serving
  • Toothpicks or wooden skewers (soaked in water for at least 30 minutes)

Preparation

  1. Start by cleaning the squid if they are not already. Remove the insides, the outer skin, and the tentacles, and then slice the squid tubes into rings about 1-2 cm thick (if preferred they can remain whole if they are not too big).
  2. Prepare a marinade by mixing in a bowl extra virgin olive oil with chopped garlic, fresh parsley, salt, pepper, and a bit of lemon juice.
  3. Place the squid in the marinade and let them rest in the refrigerator for about 30 minutes.
  4. In the meantime, prepare the grill so that it is very hot.
  5. Thread the squid onto the skewers (if they are rings, a few pieces per skewer; if you have left the squid whole, one per skewer).
  6. Cook the skewers on the hot grill, turning them occasionally, for about 2-3 minutes per side, or until they are golden and properly cooked.
  7. Once cooked, serve the skewers immediately with lemon slices on the side which the guests can squeeze over the squid to their liking.

Squids are greatly appreciated in Mediterranean cuisine and can be cooked in various ways. Skewers, in particular, offer excellent heat exposure that allows the squid to cook evenly and quickly, preserving their tenderness if not overcooked. Remember that overcooking can make them rubbery.
