Squid Salad

Ingredients

  • 500 g of cleaned squid
  • 2 cloves of garlic
  • Parsley to taste
  • Extra virgin olive oil

Preparation

  1. Clean the squid by removing the skin, head, and innards. Cut the bodies into rings and leave the tentacles whole or cut them in half, if you prefer.
  2. Bring a pot of salted water to a boil and immerse the squid. Cook for about 1-2 minutes – the squid should be tender and not rubbery.
  3. Drain the squid and plunge them into a bowl of iced water to stop the cooking and keep them tender.
  4. In a large bowl, mix the squid with the finely chopped garlic, chopped parsley, a pinch of salt, black pepper, and lemon juice. Add the extra virgin olive oil and mix well.
  5. If you wish to add other ingredients such as mixed greens, olives, cherry tomatoes, and capers, incorporate them now and mix gently to not break the squid.
  6. Taste and adjust the salt and lemon if necessary.
  7. Let your squid salad rest in the refrigerator for at least 30 minutes before serving, so that the flavors meld together well.
