Squid Rings with Peas and Tomato

Ingredients

  • 500 g of squid rings
  • 300 g of fresh or frozen peas
  • 400 g of canned peeled tomatoes or tomato puree
  • 1 white onion
  • 2 cloves of garlic
  • 1/2 glass of dry white wine
  • Chopped fresh parsley to taste
  • Extra virgin olive oil to taste
  • Salt and pepper to taste

Preparation

  1. In a wide pan, gently fry the finely chopped onion and crushed garlic in a drizzle of extra virgin olive oil.
  2. When the onion becomes translucent, add the squid rings and cook for a few minutes until they lose their initial water content.
  3. Deglaze with the white wine and let it evaporate.
  4. Add the peeled tomatoes and peas. If the tomatoes are whole, crush them beforehand with a fork.
  5. Season with salt and pepper and mix well. Cover with a lid and cook over medium-low heat for about 20-30 minutes or until the squid is tender and the flavors well combined. If the sauce dries out too much, add a little water or vegetable broth.
  6. At the end of cooking, check for salt, adjust the pepper if necessary, and sprinkle with chopped fresh parsley.
  7. Serve hot, accompanied by toasted bread or a portion of white rice if desired.
