Squid Rings with Peas and Tomato

Ingredients
- 500 g of squid rings
- 300 g of fresh or frozen peas
- 400 g of canned peeled tomatoes or tomato puree
- 1 white onion
- 2 cloves of garlic
- 1/2 glass of dry white wine
- Chopped fresh parsley to taste
- Extra virgin olive oil to taste
- Salt and pepper to taste
Preparation
- In a wide pan, gently fry the finely chopped onion and crushed garlic in a drizzle of extra virgin olive oil.
- When the onion becomes translucent, add the squid rings and cook for a few minutes until they lose their initial water content.
- Deglaze with the white wine and let it evaporate.
- Add the peeled tomatoes and peas. If the tomatoes are whole, crush them beforehand with a fork.
- Season with salt and pepper and mix well. Cover with a lid and cook over medium-low heat for about 20-30 minutes or until the squid is tender and the flavors well combined. If the sauce dries out too much, add a little water or vegetable broth.
- At the end of cooking, check for salt, adjust the pepper if necessary, and sprinkle with chopped fresh parsley.
- Serve hot, accompanied by toasted bread or a portion of white rice if desired.
