Ingredients
- 400 g of squid ink gnocchetti
- 1 sea bass of about 400 g, already cleaned
- 1 sachet of saffron
- 1 clove of garlic

- 250 ml of cooking cream
- Extra virgin olive oil
- Salt and pepper to taste

First, prepare the fish broth by cooking the sea bass in boiling water with a pinch of salt for about 20 minutes. Once ready, fillet the fish and set aside both the meat and the broth.

In a pan, lightly fry the finely chopped garlic in a drizzle of extra virgin olive oil. Add the bass fillets and sauté for a few minutes. Then, remove the garlic.

Deglaze with a bit of fish broth and add the sachet of saffron previously dissolved in a spoonful of hot water.

Incorporate the cooking cream and let it simmer until the sauce has slightly reduced. Adjust the salt and pepper to taste.

Meanwhile, cook the squid ink gnocchetti in plenty of salted water following the timing indicated on the package, usually just a few minutes.

Drain the gnocchetti al dente and transfer them to the pan with the sea bass and saffron sauce. Toss everything together for a minute so the gnocchetti absorb the flavor of the sauce.
