Squid and Shrimp Skewers
17/11/2023Squid and shrimp skewers are a tasty and relatively simple second course to make. Here is the recipe for some delicious sea skewers.
Ingredients
- 400 g of squid (clean bodies and tentacles)
- 400 g of cleaned shrimp
- 1 lemon (juice and grated zest)
- 2 cloves of garlic
- Fresh parsley to taste
- Extra virgin olive oil to taste
- Salt and pepper to taste
- Toothpicks or wooden skewers (previously moistened)
Preparation
- Start by cleaning the squid if you haven’t already done so: remove the insides, skin, and beak. Rinse well under running water. Cut the squid bodies into rings or, if you prefer, leave them whole if they are small.
- Take the cleaned shrimp, making sure they are free of the shell and intestine.
- In a bowl, prepare a marinade with lemon juice, some grated zest, finely chopped garlic (or in its skin and crushed, if you prefer a less intense aroma), extra virgin olive oil, salt, pepper, and chopped parsley. Mix the ingredients well.
- Place the squid and shrimp in the marinade and let rest in the refrigerator for about 30 minutes so that the flavors meld together.
- In the meantime, prepare the skewers by alternating a shrimp and a piece of squid on each toothpick until all ingredients are used.
- Heat a grill or nonstick pan and cook the skewers for about 3-4 minutes per side, until the squid and shrimp are golden and cooked to the right point.
- Once cooked, place the skewers on a serving dish and serve them hot, with a drizzle of extra virgin olive oil and a final sprinkle of fresh parsley if desired.
If you wish, you can pair the squid and shrimp skewers with a fresh green salad or grilled vegetables.
