Square Puff Pastry Mini Pizzas

Ingredients

  • 1 roll of rectangular puff pastry
  • 200 g of tomato sauce
  • 150 g of pizza mozzarella (or another cheese of your choice)
  • Dried oregano
  • Salt
  • Extra virgin olive oil
  • Additional ingredients of your choice: anchovies, capers, olives, mushrooms, cured meats, etc.

Preparation

  1. Preheat the oven to 200 °C.
  2. Unroll the puff pastry and, with a sharp knife or a pizza cutter, cut the pastry into squares of the desired size.
  3. Place the squares of pastry on a baking tray lined with parchment paper.
  4. Using a spoon, spread some tomato sauce on the surface of each square, leaving a small border to prevent the tomato from leaking out during baking.
  5. Add a pinch of salt and a drizzle of extra virgin olive oil over the tomato sauce.
  6. Sprinkle the mini pizzas with dried oregano to taste.
  7. Cut the mozzarella into small cubes and distribute it evenly over the mini pizzas.
  8. Add any other ingredients you prefer, such as anchovies, capers, olives, etc.
  9. Bake the mini pizzas for 15-20 minutes or until the puff pastry is golden brown and crispy, and the cheese is well melted.
  10. Remove from the oven and let cool slightly before serving.
