Sparkling Wine Stew

Ingredients

  • 500 g of beef pulp cut into cubes
  • 1 bottle of Italian dry sparkling wine
  • 1 medium onion
  • 2 carrots
  • 2 celery stalks
  • 2 cloves of garlic
  • Flour as needed for dusting the meat
  • Beef or vegetable broth, as needed
  • Extra virgin olive oil
  • Salt and pepper to taste
  • 1 sprig of rosemary
  • Some bay leaves
  • Chopped fresh parsley for garnish

Preparation

  1. Start by cleaning and cutting the onion, carrots, and celery into small pieces.
  2. In a large pot, sauté the onion, crushed garlic, carrots, and celery in extra virgin olive oil.
  3. Meanwhile, lightly flour the cubes of meat. This will help seal the juices inside and thicken the sauce.
  4. When the sauté has browned, add the meat and brown it on all sides.
  5. Deglaze with the sparkling wine and let the alcohol evaporate on high heat for a couple of minutes.
  6. Add the sprig of rosemary and bay leaves, then cover with broth just enough to cover the stew.
  7. Lower the heat and let it simmer for at least 1 hour and 30 minutes, checking occasionally and adding broth if necessary. The meat is ready when it becomes soft and easily pulled apart with a fork.
  8. Season with salt and pepper to taste.
  9. Serve the stew piping hot, garnished with freshly chopped parsley.
