Spring Cake
17/11/2023The Spring Cake is a dessert that evokes the flavors and colors of the awakening season. There is no standard recipe for a “Spring Cake,” as the term can refer to various versions of cakes using spring ingredients. However, I can suggest a version that celebrates spring with fresh fruit and a soft base, ideal for a light and fragrant dessert. Let’s take a look at one possible interpretation of this sweet.
Ingredients
- 200 g of flour
- 200 g of sugar
- 4 eggs
- 1 packet of baking powder
- Grated zest of 1 untreated lemon
- A pinch of salt
- 250 g of mascarpone
- Seasonal fresh fruit (strawberries, kiwis, blackberries, raspberries, etc.)
- Icing sugar (for decoration)
Preparation
- Preheat the oven to 180 °C.
- Separate the yolks from the whites.
- Beat the yolks with half of the sugar until you get a light and frothy mixture.
- Add the grated lemon zest to the yolk mixture.
- Whip the egg whites with a pinch of salt and gradually add the rest of the sugar until you get a shiny and firm meringue.
- Gently fold the whipped egg whites into the yolk mixture, alternating with the sifted flour and baking powder, taking care not to deflate the mixture.
- Pour the mixture into a previously buttered and floured pan, or lined with parchment paper.
- Bake for about 30-35 minutes, or until a toothpick inserted in the center of the cake comes out clean.
- Let the cake cool completely on a wire rack.
- In the meantime, wash and cut the fresh fruit as desired.
- When the cake is cool, spread a layer of mascarpone on the surface.
- Decorate the cake with the sliced fresh fruit and dust with icing sugar before serving.
