Ingredients
- 200 grams of already boiled and peeled chestnuts
- 200 ml of milk
- 2 tablespoons of sugar
- 1 sachet of vanillin or a vanilla pod
- 200 ml of whipping cream
- Cocoa powder to taste
Preparation
- Take the boiled and peeled chestnuts and put them in a small pot with the milk, sugar, and vanillin (or slit open vanilla pod if you prefer a more intense flavor).
- Put the pot on the fire and let it cook over medium heat until the chestnuts soften further and the milk reduces, becoming creamy. This should take about 10-15 minutes.
- Once the chestnuts are soft, remove the vanilla pod (if used) and blend the mixture with an immersion blender until you have a smooth and homogeneous cream. If necessary, adjust the sweetness by adding more sugar to taste.
- In a separate bowl, whip the cream until it is firm.
- Assemble the glasses by alternating a layer of chestnut cream and a layer of whipped cream. You can use a piping bag for this step for greater precision.
- Dust the top with cocoa powder and let it rest in the refrigerator for at least one hour before serving.
