Spinach, Speck, and Apple Big Salad

Ingredients

  • 150 g of fresh spinach
  • 100 g of thinly sliced speck
  • 1 green apple (Granny Smith or a crunchy variety)
  • 50 g of shelled walnuts
  • Parmesan shavings to taste
  • Extra virgin olive oil to taste
  • Lemon juice to taste
  • Salt and black pepper to taste

Preparation

  1. Start by thoroughly washing the spinach under running water. After washing them, gently dry them with a clean cloth or a salad spinner.
  2. Cut the speck into strips and sauté it in a non-stick pan until it becomes crispy. Remove the speck from the pan and place it on a plate lined with paper towels to eliminate excess oil.
  3. Prepare the apple by washing and drying it. Cut it into thin slices or cubes, depending on your preference. If you wish, you can also leave the skin on to add crunchiness.
