Spinach Frittata

Ingredients
- 4 eggs
- 200 g of fresh spinach (or frozen if fresh is not available)

If you’re using fresh spinach, wash it thoroughly under running water to remove any dirt residues. In a large pot, bring some lightly salted water to a boil, and blanch the spinach for about 1-2 minutes. If using frozen spinach, follow the instructions on the package to thaw and heat them.

Once the spinach is ready, squeeze it well to eliminate excess water. If desired, you can briefly sauté a clove of garlic in a little oil in a pan, add the spinach and let them flavor for a few minutes. Then remove the garlic.

In a bowl, beat the eggs with salt, pepper, and a sprinkle of nutmeg. Add the grated cheese and mix again.

Add the spinach to the beaten eggs and mix well to distribute evenly.

Heat a drizzle of oil in a non-stick pan. Pour in the mixture of eggs and spinach and cook over medium-low heat.
