Spinach Frittata

I will guide you step by step in preparing a delicious spinach frittata, a simple and nutritious dish that is suitable both as a second course and as a single dish for a light meal.

Ingredients

  • 4 eggs
  • 200 g of fresh spinach (or frozen if fresh is not available)
  • 40 g of grated cheese (Parmesan or pecorino)
  • Salt to taste
  • Pepper to taste
  • Extra virgin olive oil (for greasing the pan)
  • 1 clove of garlic (optional)
  • Nutmeg (optional)

Preparation

  1. If you’re using fresh spinach, wash it thoroughly under running water to remove any dirt residues. In a large pot, bring some lightly salted water to a boil, and blanch the spinach for about 1-2 minutes. If using frozen spinach, follow the instructions on the package to thaw and heat them.

  2. Once the spinach is ready, squeeze it well to eliminate excess water. If desired, you can briefly sauté a clove of garlic in a little oil in a pan, add the spinach and let them flavor for a few minutes. Then remove the garlic.

  3. In a bowl, beat the eggs with salt, pepper, and a sprinkle of nutmeg. Add the grated cheese and mix again.

  4. Add the spinach to the beaten eggs and mix well to distribute evenly.

  5. Heat a drizzle of oil in a non-stick pan. Pour in the mixture of eggs and spinach and cook over medium-low heat.

  6. When the mixture begins to set, with the help of a lid or a large plate, flip the frittata and cook the other side until it is golden brown and well cooked.

  7. Serve the spinach frittata warm or at room temperature.
