Spinach Cutlets

Spinach cutlets are a tasty vegetarian dish that is simple to prepare. Here is the recipe to make them:

Ingredients

  • 400 g of fresh or frozen spinach
  • 2 eggs
  • 70 g of grated cheese (Parmesan or Pecorino)
  • 100 g of breadcrumbs
  • 2 cloves of garlic
  • Salt and pepper to taste
  • Nutmeg to taste
  • Oil for frying (or olive oil if you prefer to bake them)

Preparation

  1. If you are using fresh spinach, wash and boil it in salted water for a few minutes. If you are using frozen spinach, you can cook it directly in a pan or in boiling water according to the instructions on the package.

  2. Once boiled, squeeze the spinach well to remove as much plant water as possible and chop coarsely.

  3. In a large bowl, put the chopped spinach and add the finely chopped garlic, grated cheese, salt, pepper, and a pinch of nutmeg. Mix to blend the ingredients.

  4. Break the eggs into another bowl and beat them. Integrate the beaten eggs into the spinach mixture and stir until you get a compact dough.

  5. Form cutlets with the spinach dough, then coat them in breadcrumbs to bread well on both sides.

  6. At this point, you can choose whether to fry them in hot oil until golden brown on both sides, or bake them in an oven at 180 °C for about 20 minutes, turning them halfway through cooking until golden.

If you choose to bake them, I suggest spraying them with a little oil before baking to get a crispier crust.
