Spinach Cream

- 1 medium potato
- 1 small onion
- 1 clove of garlic
- 500 ml of vegetable broth

- Nutmeg (optional)
- Extra virgin olive oil
- Crispy bread croutons or croutons to serve (optional)
Preparation
- Clean the spinach by removing the roots and damaged leaves, then wash it several times under cold running water. If you are using frozen spinach, thaw it as indicated on the package.
- Peel the potato and cut it into small cubes.
- Finely chop the onion and garlic.
- In a large pot, sauté the onion and garlic with a drizzle of extra virgin olive oil until they become transparent.
- Add the potato cubes and let them brown for a couple of minutes.
- Add the spinach and let it wilt.
- Pour the vegetable broth into the pot and bring to a boil.
- Lower the heat, cover with a lid, and let simmer until the potato is soft, about 15-20 minutes.
- Once the potatoes are soft, use an immersion blender to blend everything into a smooth cream.
- Add the cooking cream (if you want a richer version), a pinch of nutmeg, salt, and pepper to taste.
- Continue cooking for another 5 minutes over medium-low heat, stirring occasionally.
- Taste and adjust the salt and pepper if necessary.
- Serve the spinach cream hot with crispy bread croutons or croutons, if desired.
